Gathering is a cultivation skill that covers both planting and harvesting herbs, fruits and flowering plants. 

Interaction

Dig - Dig the plant up, destroying it. Small chance to drop a seed
Water - Available to newly planted crops. Decrease growth time
Gather - Harvest the matured plant

Summary

1. Any fruits from trees that makes "Orchard Puree" count as gathering
2. Any flowers that makes "Dried Flowers" count as gathering
3. Any spices that makes "Ground Spices" count as gathering
4. Any herbs that makes "Medicinal Powder" count as gathering
5. Any Aquatic crops from aquafarm, count as gathering
6. Harvesting any fruits from trees, herbs, and flowers count as gathering

Seems it takes long to get your gathering proficiency up but as you see above, lots of plants and trees are make it faster.

In Archeage, whatever you work on, ratio is 1 Labor Point : 1 Proficiency : 1 Vocation Badge. Livestocks, plants, trees, etc. But not like other skills, in "Gathering", you can gain your proficiency from gathering and by making it, like orchard puree, dried flowers, ground spices, and medicinal powder; these are giving you 5 gathering proficiency per making. 

Example 1 

10 mushrooms with 1 Blue Salt Knife can make 15 "Medicinal Powder"
You spend 5 Labor Points but gain 5 "Gathering Proficiency" (No Vocation Badges acquired)
Simply if you have 10000 mushrooms with 1000 Blue Salt Knives, you can gain 5000 "Gathering Proficiency" with 15000 "Medicinal Powder"
Either you can resell those to make it even. 

Example 2

If you plant seeds or trees, you can gain proficiency with "Vocation Badges" as same amount as your labor points are spent

Getting fruits from trees takes really long time but once it's fully grown, you can regularly gain your "Gathering Proficiency" and "Vocation Badges" 

Climates are very important for trees

For Banana (Climate: Tropical), it usually takes 14 h 18 m to re-harvest, but in tropical province, it only takes 10 h. It has to be spent 15 labor points but gives 15 "Gathering Profiency" and 15 "Vocation Badges"

Chart below is a ratio about seeds gathering. If you see the chart, you will know how big is 15 points in "Gathering". Chart below is what we tested for few days.
